Eating healthy and losing weight is hard but well worth it. One important thing to remember is that eating healthy is not a short-term diet, but rather a journey toward a long-term lifestyle change. So, I am always looking for great recipes and food ideas to help my clients stay on track!
Try this awesome Omelet Muffins Paleo recipe; it’s so healthy and easy to make. Plus, you can enjoy these yummy little omelet muffins for breakfast, lunch, or for a snack.
Ingredients: six eggs, 1/2 cup cooked ground meat, 1/2 cup diced green bell peppers, 1/8 cup mayonnaise, 1/8 cup water, sea salt and ground pepper to taste.
Preheat oven to 350 F and cook your ground meat. Coat six to eight muffin tins with coconut oil. Beat the eggs in a bowl and add the ground meat, bell peppers, water, mayonnaise, salt and pepper. Mix above ingredients. Scoop the mixture into six to eight muffin tins and bake for 18 minutes. You will know if muffins are ready by inserting a knife. If it comes out clean, your muffins are done. Remove from the oven and let cool before removing from the tin.
Yields eight-10 muffins — enjoy! My advice: Cook in bulk. Double up on the ingredients so you have more. I used bison for the ground meat, but lean ground beef is just as good. In addition to the green bell peppers, I also added red bell peppers.
